Cereal Cookies

  • 8 T unsalted butter
  • 50 g sugar
  • 50 g (~¼ c packed) brown sugar
  • ½ t salt
  • ½ t vanilla powder
  • ¼ t baking soda
  • ½ t baking powder
  • 1 egg
  • 177 g AP flour
  • 2 T milk
  • 1½ c cereal (Honey Maid S’mores)

375º 12-14 mins. Yield ~22 with tablespoon scoop.

NEXT TIME: no milk. I think that’s why they came out cake-y. It also may have had something to do with the baking soda?

Chili

  • Olive oil
  • 1+ lb ground turkey or beef
  • Half onion
  • Garlic
  • 15 oz can chili beans
  • 15 oz can fire roasted tomatoes
  • ~3 oz tomato paste
  • 1 T Worcestershire sauce
  • 1 T brown sugar
  • 1 t chili powder
  • 1 packet Dijon mustard
  • Oregano
  • Salt and pepper

Curry Sauce

  • a splash of ghee
  • ~12 oz coconut milk
  • handful of cashews
  • tomato paste (the first time I made this I used 4 whole tomatoes from a can, but I think tomato paste would be better – probably 4-6 T)
  • 2 heaping t curry powder
  • 1 t onion powder
  • 2 cloves garlic, chopped
  • ~1 t grated ginger

Nutella Biscotti

    Sift together

  • 12 oz AP flour
  • 2 T cocoa
  • ½ t baking powder
  • ½ t baking soda
  • ½ t salt
    In mixer bowl

  • Beat 3 eggs til frothy
  • Beat in 6 oz sugar for 2 mins
  • Stir in 150 g Nutella
  • Stir in dry ingredients

Divide dough in half and shape into logs on a well-floured surface. Bake 350º 20 mins. Cool on rack 20 mins. Decrease oven to 300º. Slice and put upright on baking sheet. Bake 30 more mins.

NEXT TIME: Try 2 eggs, they came out rather cakey. Or maybe they also need some butter to get crisper.

White Chili

In a big pot, brown 1 large/2 small chicken breasts and diced onions in olive oil. Add 1 T butter, cumin, chili powder, and ¼ c flour; sautee a couple mins. Add 2½-3 c chicken broth, 1 can cannellini beans (drained), and 1 can diced green chilis (drained). Cover and simmer until chicken is done and soft, ~30 mins. Shred chicken. Stir in a couple spoonfuls of hummus (alternatively, add garlic when adding spices), a couple spoonfuls of plain yogurt, and some grated Monterey Jack cheese. Stir in frozen corn. Makes 4 servings.
