Copycat Aussie Bites

Whaz all in food processor until dried fruit is in small bits but not paste

  • 50 g oats ground to flour
  • 1/4 t baking soda
  • ⅛ t salt (adjust if sunflower seeds are salted)
  • ⅛ t vanilla powder
  • 20 g oats
  • 16 g dried apricots
  • 2 T raisins
  • 2 T ground flaxseed
  • 2 T sunflower seeds
  • 2 T unsweetened coconut
  • 1 T chia seeds

Add and pulse until just combined

  • 2 T dry quinoa, cooked, still warm
  • 42 g honey
  • 2 T butter, melted
  • 25 g canola oil

Yield 24 with small scoop in greased mini muffin pan. 350º 9 mins, cool in pan.

NEXT TIME: Less honey, like half.
